PLANTAIN / Pisang Tanduk Goreng

Malaysian people always use this plantain or "Pisang tanduk" to make chips. They usually use the unripe or young plantain. None of us as Malaysian people knows that actually there is a lots of ways to cook and eat plantain.
 
Here is some simple dish ! :) 

Fried Plantain is one of the easy and fast Nigerian food recipes. It can be eaten with fried egg, omelette, Moi Moi, Custard meal, oat meal, akamu (ogi) etc.

How to Make Fried Plantains. 
It is also a major side dish to all the rice recipes and can be enjoyed by people from all over the world.
Ingredients
Ripe Plantain (The plantain should be ripe and hard, it is not advisable to use plantain that is soft)
Vegetable Oil – enough for deep frying.
Salt to taste
Before you fry the plantain
 
Wash, peel and slice the plantain as shown. Place in a bowl and add a little salt. Toss the plantain to ensure that the salt is evenly distributed.
Pour a generous quantity of vegetable oil into a frying pan and allow to heat. If using a deep fryer, preheat the oil to 170°C.
Frying Directions
 
1. When the oil is heated, add a considerable quantity of the plantain slices to the oil, leaving enough room for the slices to fry evenly.
2. When the underside of the slices starts to turn golden, flip the slices on their other side.
3. Fry till a desired browning is achieved.
4. Remove and place in a sieve to drain out the oil.
5. Fry the next batch of the plantain slices following steps 1 through 4.
Serve with fried egg, omelette, moi moi, Custard, oat meal, akamu (corn starch meal).

MEAT PIE / PIE DAGING

 [[ NAIJERIAN MEAT PIE / PIE DAGING ]] 


Ingredients buat Doh .. 


 4 cups of Flour

Tablespoonful of baking powder

500 grammes or 2 sticks of Margarine

2 eggs

Pinch of Salt

Teaspoonful Sugar(optional)

1 cup of ice cold water


Nigerian-style meat pie is regarded as the “cadillac” of snacks and holds its position as a favorite at every event.


Meat filling is the KEY to whether your meat pie will fly off the buffet table or if everyone will walk right past it.


Ingredients untuk inti... 


2 diced Irish potatoes

2 Lbs of minced meat

Chopped quarter onion

2 tablespoons of flour

2 whole tomatoes

dash of dried pepper

Bell pepper, Scotch bonnets (optional)

Seasoning

Directions


Add all ingredients to the saucepan, allow to cook for 15-25 minutes in oven.. 


Goreng pun boleh macam karipap tu kalau tak de oven yer .. Jangan hangit :) api slow jer ..




CHICKEN; BEEF;GOAT MEAT STEW / SAMBAL Ayam; daging

Malaysian people should know that naijerian stew is likely as " sambal" that we always cook at home but they are using fresh tomatoes, red chili and bell pepper to make it tasty. These ingredient are fresh and easy to get. Malaysian secret recipe is " belacan" but them is Maggie spicies from Naijeria. 

Wait for the recepi :) .. 


Orang kita, suka masak sambal menggunakan cili kering atau cili Boh yang dah siap tu .. Guna belacan.. Tapi Naijerian stew guna bahan segar dan semula jadi .. Tomato, cili api atau bell pepper Kalau nak sedap lagi. Rasa yer lebih sedap dan baik untuk keseimbangan diet kita. Of cz penambah perisa kena guna maggi :) Masakan yer senang disediakan.


Nigerian Chicken Stew is a delicious stew made with tomatoes, peppers, fried/grilled chicken & spices.

  If you love chicken soup, you'll love the Nigerian Chicken Stew.


Ingredients for Nigerian Chicken Stew 

- 1.5kg Fresh Tomatoes or tinned tomato puree(the watery type)

- 100g Canned tomato paste(the smallest De Rica brand thick tomato paste(optional)

- 1 litre Vegetable Oil(don't worry you won't be leaving all this oil in your stew. Read recipe to see how to re-use the oil)

- 600g Chicken

- 2 OR 3 medium bulbs Onions

- 5 Habanero Pepper (atarodo)

- 2  stock cubes

- Thyme and curry (1 tablespoon each)

- Salt to taste


Cooking directions for Nigerian Chicken Stew  

1.  Open the thick Canned tomato paste(e.g De Rica ), scoop content into a bowl and dilute with a little water.Set aside.

 Blend the tomatoes, peppers and onions. 

Tip: If you are making use of only the thick tomato paste(e.g De Rica ), simply dilute it a bit in little water and go to step 4.


2. Pour the blended tomatoes into a pot and let it boil until the consistency is thicker and  the excess water is dried up.

 

3. In another pot, add the cleaned cut chicken ,add a little water, thyme, curry ,1 stock cube and salt to taste.Cook the chicken until done and fry/grill, then set aside and reserve the liquid(Chicken stock).


4.  Now, heat up the vegetable oil, add some onions(optional, because the blended tomatoes already has onions). 

Add the dried tomatoes and tomato puree and fry for about 25 minutes or until the tomato loses it's sour taste. Stir constantly to prevent burning at the bottom.

 

5. Add the Chicken stock and cook for 10 minutes.

 

6. Next, add the fried chicken, stock cube and salt to taste. Cover and leave to simmer for 5 minutes.  (You'll notice at this stage that the oil has risen to the top of the stew).

And the Nigerian Chicken Stew is ready.Enjoy.


Tip: When the stew cools down a bit, scoop out the excess oil, pour into a bottle and preserve in the fridge. This  oil, can be used for Nigerian soups, stew, beans recipes and yam recipes too.


The Nigerian Chicken Stew is served with boiled and fried yams, Boiled rice, plantain recipes and beans recipes. Enjoy!








JALLOF RICE/ NASI TOMATO

Malaysian people should know that Jallofrice is Nasi Tomato.. The preparation is slightly different because every food has it own secret recipe and special herbs.. 


Jallofrice recipe discussed here is the classic Nigerian Jollof Rice. This is the most popular Nigerian rice recipe. This is why you will always see it in gathering or party. It is quite easy to prepare if you follow the simple steps. Every food has it's own secret recipe 


The following are other variations of Jollof Rice:

Coconut Rice

Mixed Vegetable Jollof Rice

Rice and Beans

Ingredients

2 cigar cups | 500g (1.1 lbs) long grain white rice

Tomato Stew 500 mls

Chicken (whole chicken, drumsticks or chicken breast)

Pepper and salt (to taste)

2 medium onions

3 Knorr cubes

2 teaspoons thyme

Before you cook Jollof Rice

Prepare the tomato stew. It is advisable to prepare tomato stew before hand and keep in the freezer. This is so that whenever you want to cook any jollof rice related dish, it is just a matter of adding it to your cooking.

If you will use whole chicken then wash and cut it into pieces. Cook with the thyme, Knorr cubes and 2 bulbs of onions (chopped). The cooking time depends on the type of chicken. The rooster or cockerel cooks much faster than the hen but the hen is definitely tastier. When done, grill it in an oven. You may also fry it. This is to give it a golden look which is more presentable especially if you have guests for dinner.

Parboil the rice using the method detailed in parboiling rice for cooking jollof rice. Wash the parboiled rice and put in a sieve to drain.

Cooking Directions

Pour the chicken stock and the tomato stew into a sizeable pot and leave to boil.

Add the drained parboiled rice, salt and pepper to taste. The water level should be the same level of the rice. This is to ensure that all the water dries up by the time the rice is cooked.

Cover the pot and leave to cook on low to medium heat. This way the rice does not burn before the water dries up.

If you parboiled the rice as described at parboiling rice for cooking jollof rice, the rice should be done by the time the water is dry. Taste to confirm. If not, you will need to add more water and reduce the heat to prevent burning. Keep cooking till done.


Serve with fried plantain, Moi Moi, or coleslaw.

You can spice up this recipe by adding 2 well known vegetables to arrive at what we refer to as Mixed Vegetables Jollof Rice.

Pepper soup

Kebaikan sup ini ialah sesiapa sakit demam atau badan panas atau denggi elok makan ni .. Bagi badan berpeluh.. Nak kurus pun elok makan ni !! :) banyak khasiat protein dan kebaikan untuk badan. Setiap masakan Ada rahsia resepi.. Sapa nak rahsia resepi tu bagitau yer.. Utk menarik husband kita atau orang tersayang dengan masakan kita untuk bertambah sayang.. supaya tak cari orang lain :) 


Pepper Soup is a broth-like savory, spicy  Soup made with either assorted meat/fish or poultry and some ''hot'' local spices.This is one of the sought after Nigerian Soups and is usually named  based on the type of meat (protein)used in cooking it.


This recipe below, is the  Assorted Cow Meat Pepper soup, but you can also use the same recipe for Goat meat pepper soup 


Ingredients

Assorted Cow Meat Pepper soup

*500 g Assorted Cow(tripe, heart, liver&muscle)...cut into small pieces

*2 tablespoonful pepper soup spice mix

*Habanero/Chilli Pepper (to taste)

*2 teaspoonful  Dry Uziza/basil leaves (optional)

*1 tablespoonful of ground Crayfish

*2 Stock cubes /stock powder(maggi or knorr e.t.c)

* 1 teaspoon thyme (optional)

*1 medium Onion bulb(chopped) 

* Salt - to taste

*Water (as needed)


Quick Note:  I  always make my own pepper soup spice mix but in the absence of these spices, you can make use of only roasted Calabash Nutmeg a.k.a Ehu /Ehuru/Ariwo after peeling off the roasted skin.


 Preparation 

----------------------------------

* * If you don't have the pre- packaged pepper soup spices, you can prepare you own pepper soup spices  by following the recipe HERE.


*  First, Clean and cook the toughest meat first, which is usually the cow foot and tripe (shaki). Add salt and thyme, pour enough water to cover the meat and leave to cook for 35 minutes on medium heat.

 Tip: The thyme is optional, so you leave it out if you want to. 


* After 35 minutes, stir and add the cow heart. Cook for 10 minutes and then add the muscle(fuku) and the liver. Stir well and add more water to cover the meat.


* Add the chopped onions and  stock cubes. Cover and cook for 5 minutes.


* Next, add the ground pepper, ground crayfish, uziza/basil leaves ,the  ground pepper soup spices, mix thoroughly and cook for 5 minutes or until the assorted meat are well cooked.


* Now the pepper soup is ready . Serve hot and enjoy.

My name Is Noura, Managing Director of Broadway, Hybrid Equity Sdn Bhd in Cyberjaya. My expertise is to prepare tasty, spicy and good quality spice or herbs in the food to taste like home- based food from Naijeria Africa. 

The problem is,many people didn't know the benefit of eating African food especially to men and women for diet and " pendalaman". You don't have to waste time or money to eat jamu- jamu etc. It is difficult to get those herbs in Malaysia and expensive to taste as good as back home. 

We have been established for 3 years here in Cyberjaya, Malaysia. We are here to help those who likes to taste exotic food from Africa who doesn't like to cook, or don't know how to cook TO SAVE YOUR TIME, ENERGY and YOUR MONEY to taste the food as finger licking good!!
